Apple Cake with Butter Sauce

 

1 cup unsalted butter

2 cups granulated sugar

2 eggs

2 cups thick applesauce

3 cups all-purpose flour

1 teaspoon cinnamon

1 teaspoon fresh grated nutmeg

2 teaspoons baking soda

1 teaspoon vanilla extract


Preheat oven to 325° F. Grease and flour a 10-inch tube pan. In a large mixing bowl, cream butter and sugar together until fluffy. Beat in one egg at a time. Stir in applesauce and vanilla.

In a medium bowl, sift together flour, cinnamon, nutmeg, and baking soda. Gradually add flour mixture to applesauce mixture and blend thoroughly. Pour batter evenly into tube pan. Bake for 1 hour and 10 minutes or until a cake tester comes out clean. Cool in pan for 15 minutes. Turn out on rack to cool. 

 

Hot Butter Sauce

1 cup sugar

½ cup unsalted butter

½ cup heavy whipping cream

1 tablespoon bourbon (optional)


Melt butter in a small sauce pan. Add sugar, cream, and bourbon. Bring slowly to a boil. Stir until sugar is dissolved.  Remove from heat. Cool slightly and serve over apple cake slices.
